Hi there Mike:-You might want to take a look at that old standard "60 plans for small railways " by Cyril Freezer-mostly aimed at the 4mm 00 crowd but hugely adaptible-available from PPP publications last time I looked-if it is out of print you are welcome to a lend of my copy-just let me know......
